The coulotte, AKA top sirloin cap steak, is a flat, triangular-shaped muscle that lies immediately over the top sirloin. The boneless, lean steak is one of the most tender and flavorful cuts from the sirloin, the large, well muscled hip area of the cow.

The coulotte can be cooked in a variety of different ways, cut into cubes for kabobs, stews, or into strips for stir-fry or a steak sandwich. Although it is tender and juicy, for the best results, marinate or season the sirloin cap steak with a dry rub before grilling, broiling, or pan-searing.
